Instructions
1: Optionally trim the fat cap of the prime rib. 2: Pat the meat dry with a paper towel. 3: Generously salt and pepper the meat or add directly to the marinade. 4: Finely mince the garlic cloves, thyme, and rosemary. 5: In a mixing bowl, combine olive oil, herbs, garlic, and salt and pepper. 6: Place the marinade onto the roast and massage it into all sides. 7: Marinade in the fridge overnight or for a few hours. 8: Tie the roast with kitchen twine in three equal sections. 9: Preheat the oven to 500°F and cook the roast for 15 minutes. 10: Reduce the oven temperature to 325°F. 11: Insert the smart thermometer and track the temperature. 12: Remove the roast at 10°F under your desired temp. 13: Allow to rest for 30 minutes under a tin foil tent.View original recipe
