Instructions
1: Heat an oiled pan to medium heat and begin cooking ground turkey with taco seasoning until white and opaque. Mix in a splash of water, then remove from heat. 2: In the same pan, add additional oil if needed, and sauté onion, garlic, and jalapeño for one minute on medium heat. 3: Add zucchini and cook until lightly golden brown. 4: Toss in green and red bell peppers and cook for another 2 minutes until tender. 5: Add black beans and tomatoes, mixing thoroughly. 6: Add in taco seasoning and 1/2 can of enchilada sauce. 7: Cover with strips of cut up low carb tortilla and the remainder of the enchilada sauce. 8: Finish with 4 oz or more of cheese, covering with a lid to melt. 9: Serve with avocado, sour cream, hot sauce, and cilantro.View original recipe
