Ricotta Stuffed Zucchini Boats

Deliciously stuffed zucchini boats filled with a creamy mixture of ricotta cheese, mozzarella, Parmesan, and ground chicken, seasoned to perfection. A perfect way to use up that giant zucchini from your garden!

What you need

oz ricotta cheese
cup mozzarella

cup parmesan
egg

lb ground chicken
tbsp dried oregano

tbsp dried basil

salt

pepper

cup marinara sauce
Instructions
1: Cut your zucchini in half and scoop out the insides creating a hollow boat. 2: Salt and pepper the inside of the zucchini and allow to purge excess moisture for 15 minutes. 3: Use a paper towel to absorb excess moisture. 4: Preheat your oven to 375°F and precook your zucchini for 15 minutes. 5: Prepare the filling by cooking ground chicken and seasoning with salt and pepper, then allow to cool. 6: Mix the ground chicken with ricotta, Parmesan, mozzarella, egg, and seasonings. 7: Place the ricotta mixture inside the zucchini boats. 8: Cook the stuffed zucchini for 45 minutes, pulling it out at 40 minutes to add marinara on top. 9: Cook for an additional 5 minutes.View original recipe
