1: Allow pork loin to come to room temperature. 2: Cut potatoes into halves lengthwise and then into 3 equal sections. 3: Place cut potatoes into a 9x13 baking dish. 4: Coat potatoes with olive oil and season with garlic powder, onion powder, salt, pepper, dried rosemary, and Italian seasoning, then toss in chopped garlic. 5: Create an opening for the roast and place it in the baking dish, coating the top with oil. 6: Insert a smart thermometer lengthwise into the side of the meat. 7: Preheat oven to 375°F and bake until the internal temperature reaches 135°F (about 50 minutes). 8: Ensure it does not exceed 140°F internal temperature. 9: Remove from heat, place on a plate, and allow to rest. 10: Cook potatoes for an additional 5-10 minutes at 450°F until golden brown. 11: Plate and serve with lemon slices and parsley.View original recipe
