A quick and easy family dinner, these enchiladas can be ready in under 30 minutes using shredded chicken, salsa, and cheese wrapped in tortillas and baked to perfection.

What you need

cup chicken stock

lb shredded chicken

tortilla

oz cheese
Instructions
1: In a blender, combine chicken stock and salsa and blend for about 5 seconds, longer if you like it smooth. 2: In a bowl, add shredded chicken, half of the cheese, and 1/2 cup of your sauce and mix to create the filling. 3: To a large oven-safe pan, pour a thin layer of sauce to the bottom to prevent tortillas from sticking. 4: Place the chicken filling in tortillas and roll them up. 5: Place the rolled tortillas in the pan and top with sauce. 6: Cover with foil and bake for 20 minutes at 425°F. 7: Remove from oven and top with remaining cheese. 8: Garnish with cilantro if desired and serve.View original recipe
