1: Cook bacon in a pot until dark brown and crispy. 2: Remove excess rendered fat if needed. 3: In the same pan, cook ground beef until fully cooked and brown on medium heat. 4: Add in mirepoix (carrots, celery, onion), and garlic; allow to cook until translucent (about 3-4 minutes). 5: Add flour and cook for 3-5 minutes to prevent raw flour taste. 6: Slowly add in the beef bone broth, stirring frequently to prevent clumping. 7: Once all the beef bone broth is added, begin to add the chicken broth while stirring frequently. 8: Add in the listed seasonings and diced potatoes. 9: Cook the potatoes for 25 minutes until fork tender. 10: Once potatoes are cooked, slowly add in cheese and heavy cream, stirring frequently. 11: Taste and adjust flavors with chicken bouillon, Sazon, Italian seasoning, or a combination if needed. 12: Optionally add a portion of previously cooked bacon for garnish. 13: Serve garnished with green onions, extra cheese, and pieces of bacon.View original recipe
