1: Cut chicken into bite-size pieces and season with salt, black pepper, and white pepper. 2: Load the chicken into a large Ziploc bag and toss in cornstarch, flour, and oil. Mix well. 3: Preheat the oven to 425°F. Lay down the chicken on a baking sheet, making sure the pieces are spaced apart. 4: Cook the chicken for 20 to 25 minutes, flipping halfway through. Optionally broil for 1 to 2 minutes to get it crispier. 5: To make the sauce, heat a wok or pan to medium heat and add 1 tablespoon of sesame oil. Sauté ginger and garlic for 30 seconds without burning. 6: Add red chili flakes, hoisin sauce, vinegar, brown sugar, honey, ketchup, and soy sauce. Allow to cook for a couple of minutes and adjust seasoning. 7: Add back the cooked chicken into the sauce, stir to coat, then garnish with sesame seeds and serve with rice or stir-fried veggies.
