1: Preheat your oven to 425°F. 2: Slice your peppers and onion. 3: Add them to a bowl with a drizzle of oil and half the fajita seasoning packet. Mix well. 4: Pour the mixture onto a sheet pan lined with parchment paper. 5: Bake at 425°F for 15-20 minutes until lightly charred at the edges. 6: While veggies are baking, marinate the shrimp in a bowl with the remaining fajita seasoning, juice of one lime, and cilantro. 7: Add the shrimp on top of the veggies and bake for an additional 8-10 minutes. 8: Keep an eye on the shrimp as they cook quickly. 9: Wrap the shrimp and veggies in tortillas and serve with your favorite toppings.
