1: Heat a cast iron or non-stick pan to medium heat. 2: Spread chorizo across a tortilla and pile it on high. 3: Place tortilla meat side down in the pan and cook for 2-3 minutes. 4: Flip when the meat is cooked and sprinkle on cheese, then flip again for 30-60 seconds. 5: In the same pan, crack an egg and season with salt and pepper. 6: Place a tablespoon of water around the egg to steam and cover for 30 seconds or longer. 7: Remove from heat and assemble your tacos garnishing with cilantro, onion, and hot sauce.
