1: Cube pork into small pieces. 2: In a wok, heat oil and a pad of butter on medium high. 3: Toss in pork cubes, garlic, ginger, and white pepper and cook until golden brown. Remove pork and set aside. 4: Add more oil to the wok and heat again on medium high. Toss in a pad of butter and the mixed vegetables. Cook until vibrant in color. 5: Move veggies aside and add 2 eggs to scramble. Remove this mixture from heat and set aside with pork. 6: To fry the rice, heat wok to medium high again, add oil and butter. 7: Add in the white part of the scallions and more garlic if desired. 8: Add in the cooked rice and let cook until golden brown at the edges. 9: Add in soy sauce, sweet chili sauce, veggies, eggs, and pork, and mix. 10: Add in the greens of the scallions, let cook until flavors combine and serve!
