1: Optionally trim the fat cap of the prime rib if desired. 2: Pat the meat dry with a paper towel. 3: Salt and pepper the meat generously or add to the marinade. 4: In a bowl, mix together the marinade ingredients. 5: Coat the roast with the marinade on all sides. 6: Tie the roast with kitchen twine in 3 equal sections. 7: Place in an oven-safe dish or cast iron skillet and bake at 500°F for 15 minutes. 8: After 15 minutes, insert the thermometer into the thickest part of the meat. 9: Roast at 325°F until the internal temperature reaches 125°F for medium or 115°F for medium rare. 10: Remove from heat and place on a cool baking sheet, covering with a tinfoil tent. 11: While the roast is resting, combine all ingredients for the horseradish sauce in a bowl and place in the fridge. 12: Serve the roast with the horseradish cream sauce.
