1: Air fry corn on 400°F until lightly charred (about 7 minutes). 2: Cut the kernels away from the cob using a sharp knife. 3: In a bowl, combine corn, mayo, sour cream, lime juice, and salt; mix well. 4: Season shrimp with tajin and Cajun seasoning and allow to marinate for 15 minutes. 5: Heat an iron skillet on medium and add oil. 6: Cook shrimp for 1-2 minutes on each side, then remove from heat. 7: Pile the corn mixture high on the shrimp and top with cilantro, jalapeño, and fresh lime juice. 8: Add more tajin seasoning if desired, and enjoy!
